About Food – Lobio Soup
The Georgian word ‘lobio’ (Georgian: ლობიო) means ‘beans’ and there are a number of varieties of lobio dishes. In this recipe we show how to make a delicious soup with lobio, vegetables and spices.
Ingredients: 300 grams of lobio (kidney beans), 2 potatoes, 1 tomato, 1 onion, 1 carrot, 4 cloves of garlic, 4 bay leaves, 1 level tsp of blue fenugreek, 1 level tsp of dried coriander, 1 tbs of red pepper, 3 tbs of oil and salt (amount dependent upon personal preference).
Preparation: Soak the beans in a deep cooking pot of cold water for two hours prior to cooking. Drain water and add the bay leaves and up to 2 liters of fresh water.
Cook on a medium heat until the beans are tender.
Chop the onion and slice the carrot and add to a pan containing 3 tbs of oil. Fry on a medium heat for 10 minutes, stirring frequently.
Chop and add the tomato to the pan and continue frying for 3-4 minutes. Add the fried onion, tomato and carrot to the pot containing the cooked lobio.
Peel and cube the potato and crush the garlic and add, together with the spices and salt, to the pot. Add one and a half liters of water. Stir and cook on a medium heat until the potatoes are cooked.
Serving: Serve hot.
