Chicken liver with Ajika (with nuts) and Summer Savory is a delicious family meal with a piquant flavor.

Chicken Liver with Ajika and Summer Savory

Ingredients: 1 kilo of chicken liver, 3 medium size onions, 2 tbs of ajika with nuts (see link at the foot of this article to see a step-by-step recipe), half a tsp of Summer Savory, 150 ml of white wine, 2 tbs of white wine vinegar, 1 tbs of coarse hot red pepper, 4 bay leaves, 3 tbs of sour cream, 2 tbs of tomato puree, 7 tbs of oil and salt (amount dependent upon personal preference).

Preparation (marinade): Add the liver to a bowl. Add 1 chopped onion, 1 tbs of ajika with nuts, 3 tbs of sour cream, 2 tbs of tomato puree, 1 tbs of coarse hot red pepper, 150 ml of white wine and 2 tbs of white wine vinegar.

Mix the ingredients and leave in a refrigerator for 1 hour.

When ready to cook, add the marinated ingredients, together with 4 bay leaves, to a pan and cook on a low heat for 30 minutes.

Cooking Chicken Liver with Ajika and Summer Savory

After 30 minutes, add two chopped onions, stir thoroughly and continue to cook on a medium heat for 15 minutes.

Add 1 tbs of ajika with nuts, salt and half a tsp of Summer Savory. Mix thoroughly and turn off the heat after 2 minutes.

Serving: Serve hot. We served ours with a decoration of a Borjgali (Georgian: ბორჯღალი) – an ancient Georgian symbol of the Sun.
