About Food – Lobio with Mint and Eggs

Lobio (Georgian: ლობიო) is a popular Georgian dish made with kidney beans and usually eaten with Mchadi and marinaded vegetables. The Georgian word ‘lobio’ means ‘beans’. There are a number of varieties of this dish and in this recipe we show how to make it with mint and eggs.

Lobio with Mint and eggs

Ingredients: 400 grams of kidney beans (lobio).

Lobio Beans

1 tsp of dried coriander, 1 tsp of dried mint, 1 tsp of dried Summer Savory, 4 cloves of garlic, 4 bay leaves, 2 eggs, 3 white onions, 20 grams of fresh parsley, 20 grams fresh coriander and salt (quantity dependent upon personal preference).

Soak beans in a deep cooking pot of cold water for two hours prior to cooking.

Drain water and add the bay leaves, salt and 1.5 liters of fresh water. Cook on a medium heat until the beans are tender.

Chop the onions and fry in a little oil.

Add the onions to the lobio and stir. Crush the garlic, dried mint and dried Summer Savory together and add to the lobio and stir thoroughly.

Boil the lobio and taste. Add salt if necessary. Add the two eggs.

Stir the eggs into the lobio.

Chop the fresh coriander and parsley and add to the lobio. Stir once and turn off the heat.

Serving: Serve hot, garnished with chopped fresh parsley and coriander.

    This looks amazing. The first time I tried Georgian lobio was at The Cellar on Rustaveli (Tbilisi). It was so yummy. Thanks for sharing this recipe – can’t wait to try it!
