About Food – Chicken Liver with Red Onions and Spices
Chicken liver is popular in Georgia and often eaten together with lobiani. In this recipe we show how to make a delicious chicken liver dish made with onions, wine and a special Georgian spice mix.
Ingredients: 1 kilo of chicken liver, 5 red onions, 300 ml of white wine, 2 tbs of white wine vinegar, 7 tbs of oil, 2 bay leaves, 50 grams of butter, 1 tsp of black peppercorns, 1 level tbs of dried hot pepper, 1 tsp of Georgian spice mix (ingredients below) and salt (amount dependent upon personal preference).
Ingredients for Georgian spice mix: 1 whole small bulb of garlic, 1 tbs of dried coriander, half tsp of crushed dill seeds, half tsp of dried Pennyroyal (also called squaw mint, mosquito plant and pudding grass), 1 heaped tsp of dried Summer Savory, 1 heaped tsp of ground coarse red pepper and salt (amount dependent upon personal preference).
Preparation (Georgian spice mix): Remove skins from the garlic and crush the cloves. Put the garlic to one side and add all of the other ingredients to a mixing bowl. Thoroughly mix. Add the crushed garlic and mix thoroughly by hand. You may want to wear gloves. This Liver recipe only requires 1 tsp of the spice mix. The remainder can be stored in an airtight jar in a cool place. This spice mixture can be used in a variety of meat dishes and sauces.
Preparation (Liver): Wash the liver and add to a pot, together with 2 bay leaves, 300 ml of white wine, 3 tbs of oil, and 1 tsp of black peppercorns. Cover and cook on a medium to high temperature for 6-7 minutes. Reduce heat to medium and cook until the wine disappears.
Add 1 tsp of Georgian spice mix, together with 1 level tbs of dried hot pepper and salt (amount dependent upon personal preference). Stir.
Slice the onions and add to the pot, together with 50 grams of butter and 4 tbs of oil. Mix.
Cook (uncovered) on a low to medium temperature for a further 15 minutes, stirring frequently.
Serving: Serve hot. We garnished ours with red onion.
