About Food – Souzi

Souzi is a popular Georgian family meal, usually made with pork and potatoes as the main ingredients. In summer tomatoes are added.

Souzi

Ingredients (8-10 servings): 1 kilo of pork, 1 kilo of potatoes, 3 large onions, 5 medium to large juicy tomatoes, 4-5 cloves of garlic, 3 sweet red peppers, 3 hot red peppers, 2 bay leaves, 10 grams of fresh parsley, 1 tsp of dried coriander, 5 tbs of oil (if meat is not fatty), and salt (amount dependent upon personal preference).

Preparation: Cube the pork and add to a deep pot. Add 300 ml of water. Cover and bring to the boil on a medium to high temperature, stirring frequently. When the water has nearly disappeared add a further 300 ml of water and bring to the boil again, stirring frequently. Do this for a total of three times. This will make the meat very soft and tender.

Pork for Souzi recipe - Copy

Chop and add the onions, together with the bay leaves. Add 5 tbs of oil (not necessary if you have used fatty pork). Stir. Partly cover and cook on a medium temperature for 5-7 minutes, stirring frequently. Do not let the onions brown.

Cut the potatoes into small to medium pieces and add to the pot.

Adding Potatoes - Copy

Add 1 liter of water. Cover and cook on a medium temperature until the potatoes soften but retain their form.

Adding Water - Copy

Remove the skins from the tomatoes and chop and squash them. Add to the pot. Stir. Cover and cook for 5 minutes.

Adding Tomatoes - Copy

Slice the sweet and hot peppers and add to the pot, together with 1 tsp of dried coriander, and salt (amount dependent upon personal preference). Stir and cook on a medium temperature for 10 minutes.

Adding Spice - Copy

Finely chop the parsley and garlic and add to the pot. Stir and remove from the heat.

Serving: Serve hot.
