About Food – Green Lobio with Tomatoes

The Georgian word ‘lobio’ (Georgian: ლობიო) means ‘beans’ and there are a number of varieties of lobio dishes. In this family recipe we show how to make a spicy lobio dish made with green beans, tomatoes, peppers and walnuts.

Ingredients: 700 grams of green beans, 1 large tomato, 2 onions, 1 sweet red pepper, 1 green hot pepper, 4 cloves of garlic, 150 grams of walnuts, 1 level tsp of blue fenugreek, 1 level tsp of dried coriander, 1 level tsp of hot red pepper, 1 level tsp of dried marigold, salt (amount dependent upon personal preference), 5 tbs of oil and 20 grams of fresh parsley.

Wash and remove the ends from the green beans. Add to a pan of salted water and boil until the beans are soft. Use a colander to drain the water from the beans.

Slice the onions and red pepper and add to a pan. Fry in 5 tbs of oil on a medium heat for 4-5 minutes. Remove the skin from the tomato, slice and add to the pan. Stir and after 2 minutes add the boiled green beans. Continue to fry for a further 5 minutes. Whilst the beans, onions, red pepper and tomato are frying, grind the walnuts and garlic together (we used a meat grinder). Slice the hot green pepper and finely chop the parsley. Add the ground walnuts/garlic, chopped pepper and parsley, together with the spices, to the pan.

Chopped Ingredients - Copy

Stir thoroughly and remove from the heat.

Frying Ingredients - Copy

Serving: Serve immediately.
