About Food – Lobio with Fried Ham

The Georgian word ‘lobio’ (Georgian: ლობიო) means ‘beans’ and there are a number of varieties of lobio dishes. In this family recipe we show how to make lobio with fried ham.

Ingredients: 300 grams of kidney beans.

Lobio Beans

100 grams of ham. A good layer of fat will give the dish a great flavor.

Other ingredients: 2 large white onions, 1.5 tbs of coarse red pepper, 4 bay leaves, 2 cloves of garlic and salt (amount dependent upon personal preference).

Preparation: Soak the beans in a deep cooking pot of cold water for two hours prior to cooking. Drain water and add the bay leaves, salt and 1.5 liters of fresh water.

Cook on a medium heat until the beans are tender.

Cooked Lobio Beans

Cut the ham into square shaped pieces and add to a pan. Fry on a medium heat for 3 minutes, turn the ham over and fry for a further 2 minutes.

Chop the onions and add, together with the coarse red pepper, to the pan.

Stir and continue to cook on a medium heat for 8-10 minutes, stirring frequently.

Crush the garlic and add, together with the cooked beans and salt, to the pan. Stir, bring to the boil and remove from the heat.

Serving: Serve hot. We used several pieces of the fried ham to garnish the dish.
