About Food – Beetroot Fkhali with Walnuts
Fkhali (Georgian: ფხალი) is a popular dish that can be made with many different types of leaves, including spinach, nettles, cabbage and beetroot. It can also be made with vegetables and nuts. In this recipe we show how to make Fkhali with beetroot and walnuts.
Ingredients: 1 kilo of red beetroot, 200 grams of walnuts, 1 tsp of blue fenugreek, 1 tsp of dried coriander, 1 tsp of coarse red pepper, 6 tbs of white wine vinegar, 3 cloves of garlic, 10 grams of fresh coriander and 10 grams of fresh parsley, and salt (amount dependent upon personal preference).
Preparation: Boil the beetroot. Crush the walnuts and garlic together and add to a mixing bowl, together with the spices and salt.
Once the beetroot has boiled and is fairly soft remove the skin and chop into pieces.
Grind the beetroot pieces – we used a meat grinder.
Finely chop the fresh parsley and fresh coriander and add the ground beetroot to the nuts and spice mixture. Add 6 tbs of white wine vinegar and mix with your hands (for best result) or with a wooden spoon.
Use your hands to shape the mixture into balls.
Serving: Serve cold. We garnished ours with raw onion.
