About Food – Tkemali (Georgian Wild Plum Sauce)

Tkemali (Georgian ტყემალი) is the Georgian name for a variety of sour plum, as well as a sauce made from the plums.

The three main types of plum sauce are green, yellow and red. Green Tkemali sauce is prepared from unripe fruit in spring whilst the yellow and red ones are cooked from ripe plums at the end of summer.

Tkemali is used for fried or grilled meat, poultry and potato dishes, and has a place in Georgian cuisine similar to tomato ketchup in America.

Tkemali can be made at home and Georgia About recently made some and will publish a step-by-step photo recipe.
