About Food – Eggplant with Spicy Mayonnaise

In this recipe we will show how to make a popular Georgian family dish of eggplant with spicy mayonnaise (Georgian: ბადრიჯანი მაიონეზით). This is primarily a summer dish and is served either warm or cold. Our version is quite spicy so you may want to reduce the quantities of spices or omit them.

Ingredients (3 servings): 500 grams of Eggplant. We get ours from this smiling man in one of Tbilisi’s markets.

Other ingredients: 150 grams of white or red onions, 4 cloves of garlic, 100 grams of fresh parsley, 30 grams of fresh coriander (optional – not shown in picture), 100 grams of mayonnaise, black pepper, half tsp of dried Blue Fenugreek, half tsp of dried coriander, half tsp of red pepper, salt and 100 ml of oil.

Preparation: Add oil and chopped eggplant to a pan and fry on both sides on a low heat.

Remove the eggplant from the pan and add to a bowl with chopped onions and parsley.

Mix the eggplant, onions and parsley.

Finely chop the coriander (this is optional) and add to a mortar with salt, spices (except the red pepper) and garlic and crush ingredients with a pestle.

Add the crushed ingredients to a mixing bowl, pour in the mayonnaise, add dried red pepper and mix with a spoon.

When mixed, pour the mayonnaise mixture over the fried eggplant. Stir carefully until the eggplants are covered with the mayonnaise mixture.

Serving: It should be served warm but is also deliciously refreshing when cold.
