About Food – Ojakhuri with Rachuli Bacon and Salad
Ojakhuri is the generic name for meat (usually pork) and fried potatoes. In this family recipe we show how to make Ojakhuri with Rachuli bacon, fried potatoes and a salad that would be served at a supra (Georgian feast).
Ingredients: 1 kilo of potatoes, 200 grams of Imeretian cheese, 400 grams of Rachuli bacon (or a fatty bacon), 2 hot green peppers, 1 cucumber, 3 tomatoes, 15 grams of parsley, 1 tsp of dark wine vinegar, and 3 red onions.
Preparation: Slice the bacon into medium sized strips and add to a pan. Fry on a low heat for around 7-8 minutes, turning mid-way. There should be no need for any oil as the bacon will fry in its own fat.
Slice the potatoes and add to the pan containing the bacon. Arrange the potatoes so that they will fry in the bacon fat. Fry until golden brown. Stir occasionally to ensure that the potatoes fry evenly. If the bacon fat is insufficient to fry the potatoes, add a little oil.
Slice two red onions and add to the pan. Stir once and continue to fry for 3-4 minutes. Transfer to a serving bowl.
Serving: Chop the parsley, crumble the cheese, slice the remaining red onion, together with the cucumber, tomatoes and hot green peppers, and add to the serving bowl. Sprinkle with 1 tsp of dark wine vinegar and serve.
