About Food – Ojakhuri with Rachuli Bacon

In this recipe from the historical Racha region (Georgian: რაჭა) of Georgia we show how to make Ojakhuri with Rachuli bacon. Simple and easy to prepare, it makes a delicious meal.

Rachuli Ham Ojakhuri - Copy

Ingredients: 400 grams of fatty bacon. We used smoked bacon from Georgia’s historical Racha region. This particular bacon is famous throughout Georgia for its taste and aroma.

Other ingredients: 1 kilo of potatoes and 1 onion.

PreparationCut the bacon into strips and pieces and add to a pan. Fry on a medium heat for 3 minutes, turn the bacon over and fry for a further 2 minutes.

Rachuli Ham - Copy

Peel and cut the potatoes and remove any excess water. Add to the pan and stir thoroughly so that the potatoes are covered with the bacon fat. Fry partly covered on a medium heat until the potatoes are crispy on the outside and soft on the inside. Stir frequently.

Frying Rachuli Ham with Potatoes - Copy

Serving: Serve hot, garnished with onions. This dish is traditionally eaten with Tkemali (Georgian ტყემალი) sour plum sauce.
