About Food – Kirkazhi Lobio
The Georgian word ‘lobio’ (Georgian: ლობიო) means ‘beans’ and there are a number of varieties of lobio dishes. In this recipe we show how to make a version of Kirkazhi lobio that is popular in the Kakheti region of Georgia.
Ingredients: 600 gram of lobio (kidney beans), 4 cloves of garlic, 1 red onion, 50 grams of fresh parsley, half tsp of dried mint, 1-2 bay leaves, 3 tbs of oil (the Kakhetian recipe uses unrefined sunflower oil), 2 green onions and salt (amount dependent upon personal personal preference).
Preparation (lobio beans): Soak the beans in a deep cooking pot of cold water for two hours prior to cooking. Drain water and add the bay leaves, 1 clove of garlic and green onion (optional) and up to 2 liters of fresh water.
Cook on a medium heat until the beans are tender.
Drain the water and add the cooked beans to a mixing bowl. Add chopped parsley, thinly sliced onion, 3 cloves of crushed garlic, mint and salt.
Add 3 tbs of oil and mix the ingredients thoroughly.
Serving: Serve immediately.
