About Food – Chicken Salad with Hazelnuts and Pomegranate Juice
Pomegranate is a popular ingredient in Georgian cuisine. In this family recipe we show how to make a chicken salad with hazelnuts and pomegranate juice.
Ingredients: 800 grams of chicken breasts, 1 pomegranate, 150 grams of hazelnuts, 2 cloves of garlic, 1 level tsp of blue fenugreek, 1 level tsp of dried coriander, 1 heaped tsp of coarse, hot red pepper, salt (amount dependent upon personal preference), 2 small red onions, salad leaves, half tsp of paprika and 5 tbs of oil (for frying).
Preparation: Sprinkle the chicken breasts with paprika and salt and fry on a low temperature for half an hour, turning halfway through.
Shell the hazelnuts. Add to a hot pan and heat on a low-medium heat for 2-3 minutes. Stir continuously with a wooden spoon to loosen the skins. Remove from the heat and allow to cool a little. Remove the skins from the warm nuts with your fingers.
Shred the fried chicken with your fingers and add to a mixing bowl with 1 heaped tsp of coarse, hot red pepper and salt (amount dependent upon personal preference). Stir thoroughly.
Add the hazelnuts and garlic cloves to a mortar and crush with a pestle to create a coarse mixture.
Thinly slice the onions and add, together with the crushed hazelnuts and garlic, to the mixing bowl. Add 1 level tsp of blue fenugreek and 1 level tsp of dried coriander. Stir thoroughly.
Remove the outer and inner skin from the pomegranate. Add one third of the seeds to the mixing bowl. Squeeze the juice from the remaining seeds and sprinkle it over the ingredients in the mixing bowl. Mix thoroughly.
Serving: Serve cold on a bed of lettuce.
