About Food – Beef and Radish Salad
In this family recipe from the Imereti region of Georgia (Georgian: იმერეთი) we show how to make a beef and radish salad. This type of salad is popular in winter.
Ingredients: 400 grams of radishes, 700 grams of lean beef, 150 grams of mayonnaise, 1 tsp of blue fenugreek, 1 tsp of dried marigold, 1 tsp of dried coriander, 1 heaped tsp of dried hot red pepper, and salt (amount dependent upon personal preference).
Preparation: Cut the beef into 5-6 pieces and add to a pot of unsalted water. Bring to the boil and then simmer for two hours on a low to medium heat.
Thoroughly wash the radishes. Remove and discard the ends and then thinly slice.
Shred the pieces of boiled beef with your fingers.
Add the beef and radishes to a mixing bowl.
Add 1 tsp of blue fenugreek, 1 tsp of dried marigold, 1 tsp of dried coriander, 1 heaped tsp of dried hot red pepper, and salt (amount dependent upon personal preference).
Add 150 grams of mayonnaise. Thoroughly mix the ingredients with a spoon.
Serving: Serve cold.
