About Food – Green Tomato Salad with Walnuts

In this recipe we show how to make a western Georgian dish made with green tomatoes and walnuts. Served cold, it is popular in the summer/autumn.

Green Tomatoes and Nut Paste

Ingredients: 3 large green tomatoes, 200 grams of walnuts, 1 medium sized onion, 3-4 cloves of garlic, 20 grams of fresh parsley, 20 grams of fresh coriander, 1 level tsp of dried marigold, 2 tsp of dried red pepper, 1 level tsp of blue fenugreek, 1 level tsp of dried coriander, 1 tbs of oil, 6 tbs of vinegar and, salt (amount dependent upon personal preference).

Preparation: Slice the tomatoes and add to a pan with 200 ml of salted water, 2 tbs of vinegar and 1 tbs of oil. Boil for 10 minutes.

Drain the tomatoes in a colander. Press with your hand to extract as much water as possible.

Add the tomatoes to a mixing bowl together with a sliced onion.

Crush the walnuts and garlic together (we used a meat grinder).

Add the spices to the crushed walnuts and garlic.

Mix and add 4 tbs of vinegar.

Nut and Spice Mixture

Continue mixing and then slowly add 70 ml of boiled, cooled water, stirring continuously. The mixture should look like the picture below.

The Consistency of Satsivi

Add the mixture to the tomatoes and onions. Mix thoroughly but carefully.

Finely chop the fresh parsley and fresh coriander and add to the mixture. Stir carefully and leave for 2-3 hours before serving.

Mixing

Serving: serve cold.
